Potato & Sweet Pepper Hash
Savory potatoes and sweet mini peppers make up this quick and easy griddled breakfast hash. Serve alongside eggs, meat, and fruit for a well-balanced breakfast for yourself or the whole family!

Ingredients

4 russet potatoes, medium diced

6-8 mixed mini sweet peppers, sliced

½ medium yellow onion, sliced

4 tbsp butter

Salt and pepper, to taste
Directions
Preheat your flat top griddle to medium heat
Add butter and raw potatoes
Griddle the potatoes until golden brown
Add peppers and onions and continue to cook until the potatoes are fork tender
Season to taste with salt, pepper, and favorite spices
Remove from the griddle and allow to sit for 3-4 minutes before serving
