Glazed Cornish Game Hens
These sweet and spicy Cornish game hens are simple to prepare, while still having what it takes to be the star of the show. They’re packed with flavor thanks to our Louisiana Grills Savory Smokehouse Rub and a glaze that combines the sweetness of ripe raspberries and the kick of jalapeno.

Ingredients
-
2 Cornish Game Hens – Fresh or thawed
-
Extra Virgin Olive Oil
-
Louisiana Grills Savory Smokehouse Rub - Apply liberally
-
¾ cup Louisiana Grills Raspberry Jalapeno BBQ Sauce/ Glaze – Use for glaze
Directions
Set your Louisiana Grill to 250°F.
Brush the hens with oil, and then season the hens liberally with Louisiana Grills Savory Smokehouse Rub.
Place the hens directly on the grill, breast side up, and close the lid.
Cook at 255°F for 45 minutes, and then turn the heat up to 400°F.
Once 400°F is reached, open the sear grate, and quickly sear the hens on both sides to finish. You are looking for a finished temperature of 160°F-165°F.
Remove the hens from the grill, and glaze liberally with the Louisiana Grills Raspberry Jalapeno BBQ Sauce/ Glaze. Let the hens rest 10 minutes before serving.
Note
Louisiana Grills Honey Balsamic BBQ Sauce makes for a great glaze as well. These hens cook best unstuffed, and pair well with Corn Casserole, Sweet Potatoes, or Rice Pilaf.
