Wood Pellet Recommendation
2 Garlic Cloves, Minced
8 oz Langostino Tails
1/2 tbsp Olive Oil
to taste Salt & Freshly Ground Black Pepper
1/4 cup White Wine
2 tbsp Butter
1 Lemon, juice & zest
8 oz Spaghetti, cooked
1 Zucchini, thin slice
With a similar taste and texture to lobster, langostinos are tender pieces of tail meat from a relative of the spiny lobster.
Fire up your Louisiana Grills pellet grill and preheat to 400°F. If using a gas or charcoal grill, set it up for medium-high heat.
Place cast iron skillet on grill, and heat olive oil and 1 tablespoon of butter. Add garlic and sauté one minute until fragrant and softened, then add zucchini and sauté 2 minutes. Transfer zucchini aside in a small bowl.
What are Langostinos?
Add lemon juice and white wine to skillet. Simmer for 2 minutes, then add heavy cream and 1 tablespoon of butter. Reduce slightly, then add the langostino tails and simmer 2 minutes.
Add cooked pasta, and gently toss in sauce to coat pasta. Heat for 2 minutes, then add sautéed zucchini, and season with lemon zest, fresh herbs, salt, and pepper. Gently toss everything together and heat for 2 more minutes.
Remove from grill and serve hot.

Can’t find langostino tails? You can use lobster or scallops instead.
