Guinness Beer Braised Beef Short Ribs
Louisiana Grills Executive Chef, Steve Grover (@supergriller), shows us how to braise these decadent Beef Short ribs in Guinness Beer. Just in time for St. Patrick’s Day, the beef short ribs are first smoked for 1 hour to infuse that signature Louisiana Grills wood flavor into the meat. Then to break the rib meat down into an incredibly tender dish, it is braised in Guinness Stout Beer resulting in a deliciously rich and savory flavor. Serve with your favorite mash potatoes recipe to complete your dinner.
You may see short ribs sold as a Flanken cut in which the ribs and bone are cut longways with a saw, but for this recipe, you will want a traditional style cut.

The spicy flavors of Mesquite Hardwood will help enhance the savory flavors of this recipe nicely.
Note: This recipe uses Louisiana Grills Chophouse Steak Rub seasoning.
- Preheat the grill to 200°F. While the Grill is heating, season the ribs with the Louisiana grills Chophouse Steak Rub and place them on the grill for 1 hour.
- After 1 hour, remove the ribs from the grill and increase the temp to 350°F. Once it is up to temp, place the ribs back on the grill until they are browned.
- In a Dutch oven add the vegetable oil, garlic, onion, and celery. Sauté for 2-3 minutes.
- Add the Guinness, beef stock, Dijon mustard and bring to a simmer.
- Add the short ribs, cover and continue to cook for 3 hours.
- Remove the ribs and serve with your favorite mash potato recipe.
To add another layer of flavor, do a reverse sear before braising in the beer.
