In a medium sized mixing bowl, add 2 sticks softened butter, 1 tbsp Chophouse Steak Seasoning, and 1/4 cup bleu cheese crumbles. Mix together by hand or use a hand mixer. Refrigerate after mixed.
Fire up your pellet grill and set the temperature to 450-500°F. If you’re using a gas or charcoal grill, set it up for high heat. Place the NY Strip Steaks on the grill, and immediately place butter chunks around the steaks. Sear each steak for 3 minutes, then flip and grill on the other side for another 3 minutes. The steaks are finished when they are charred on the outside but have an internal temperature of 135°F on the inside. Remove the steaks from the grill and allow the meat to rest for 5 minutes before serving. Place bleu cheese butter on the steaks and enjoy!
