Directions
Fire up your Pit Boss to 375˚F. If you’re using a gas or charcoal grill, set it up for medium heat.
Place the chicken breasts on a cutting board and use a knife to cut a pocket into the side of each chicken breast.
In a large bowl, mix together the broccoli, cream cheese, cheddar cheese, parmesan cheese, red pepper, and Savory Smokehouse Rub. Mix well. Refrigerate.
Spoon the mixture evenly into the pocket you have made in each chicken breasts.
Wrap each chicken breast in a slice of bacon, and pin the bacon securely with toothpicks.
Place a temperature probe into the thickest part of the chicken breast and place on the grill. Grill the chicken for 20-25 minutes, then flip and grill for another 15 minutes, or until the bacon is cooked and beginning to crisp, and the chicken reaches an internal temperature of 170˚F.
Remove the chicken from the grill and allow it to rest for 5 minutes before serving.
