Start your Grill on 'smoke' with the lid open until a fire is established in the burn pot (3-7 minutes). Preheat to 250F.
In a food processor, combine the Ritz crackers, Oreos and melted butter and pulse until fully incorporated. Pour into an 8" pie pan and press firmly until the crust is tightly packed.
Over medium heat, simmer the heavy cream, remove from heat and whisk in sugar, Baileys, and instant coffee until everything is dissolved.
Pour liquid into the pie crust and place in your preheated Grill. After 10 minutes, increase the temperature to 325F and bake for about 25 minutes. Sprinkle with a variety of dark and white chocolate during the last 5 minutes of baking. Eat up and Enjoy!
