In this twist on the Italian staple, the cornmeal is smoked dry then cooked right on the pellet grill to absorb the delicious wood-fired flavors. Topped with toasty browned butter and crispy sage leaves, serve this cozy side with braised short ribs, shrimp, or roasted vegetables for a hearty meal.
This Smoked Polenta recipe is made from cornmeal which is maize (corn) that is ground into a fine flour. Corn contains no gluten so most polenta is gluten free. Some recipes or products may use wheat products as a filler, but this recipe does not.
