Smoked Butternut Squash with Bacon

Ingredients

1 tsp Ancho Chili Powder
2 Bacon Slices, Finely Diced
1 tsp Black Pepper
1 tbsp Brown Sugar
1 Butternut Squash
½ tsp Garlic Powder
1 tbsp Maple Syrup
1 tsp Olive Oil
1 sprig Rosemary, Springs
Salt

Cooking Instructions

Butternut squash is a Fall staple that picks up delicious woodsy flavors when smoked. This Smoked Butternut Squash with Bacon is the perfect side dish to any Fall spread and comes together quickly, all on the pellet grill. The squash is brushed in a sweet and smoky Ancho chili glaze, which melts down and caramelizes into a rich and nutty topping that compliments the salty bacon topping. Enjoy with any roast or as a hearty Thanksgiving Turkey  or Christmas side.

What Kind of Wood Pellets to Use with Butternut Squash?

We recommend using Louisiana Grills Georgia Pecan Hardwood Pellets with this recipe. The nutty, smoky flavor of the Pecan wood will help enhance the rustic flavors of the butternut squash.

  1. Fire up your Louisiana Grills pellet grill and preheat to 350° F. If using a gas or charcoal grill, set it up for medium heat.
  2. Place butternut squash on a stable cutting board and cut stem from squash, then cut in half lengthwise. Remove and discard seeds using a spoon. Score diagonal lines into surface of each squash half to form a diamond-like pattern, about ¼” deep.
  3. In a small bowl, whisk together oil, salt, black pepper, Ancho chili powder, brown sugar, and maple syrup until a thick glaze forms.
  4. Brush half of the glaze mixture on top of each squash half, and place ½ sprig of rosemary in the cavity where seeds once were.
  5. Place squash, skin-side down, directly on grill grate. Grill for one hour, with lid closed.
  6. Brush on remaining glaze, and grill an additional 30 minutes. Remove from grill and set aside.
  7. Increase grill temperature to 400° F and place cast iron skillet directly on grill grates. Add diced bacon and sauté until crisp. Sprinkle bacon on top of squash halves and serve hot.
