  1. Start your Grill on ''smoke'' with the lid open until a fire is established in the burn pot (3-7 minutes). Preheat to 300F.

  2. In a mixing bowl, whisk together the cornstarch and club soda. In small batches, dip the potatoes in the batter, allow the excess to drip off, and hold a wire rack, then repeat the process with the rest of the potatoes.

  3. Take the salt, garlic powder, paprika, and sugar, mix them in a bowl, then set aside. Next place a cast iron skillet in the grill and heat up the oil.

  4. Then fry half of the potatoes, stirring on occasion until the potatoes are golden brown and crispy. Remove the fries from the grill, sprinkle with the seasoning, and then place them on a paper towel lined baking sheet.

  5. Repeat with the second batch, then enjoy.
