Wood Pellet Recommendation

In order to add an extra level of heat to this rendition of a bayou classic, we recommend using our Texas Mesquite Hardwood Pellets.

Note: This recipe uses Louisiana Grills Key Lime Jerk Seasoning.

  1. Fire up your Louisiana Grills pellet grill on SMOKE mode and let it run with lid open for 10 minutes then preheat to 400° F. If using a gas or charcoal grill, set it up for medium-high heat.
  2. Divide each corn cob into 6 pieces, then chop each third in half lengthwise. Slice potatoes into 2 inch pieces. Par-boil potatoes in salted water for 10 minutes, adding in the corn during the last 5 minutes. Drain and set aside.
  3. In a large bowl combine shrimp, sausage, corn, and potatoes. Stir together melted butter, Caribbean Key Lime, garlic, and lemon juice. Pour over shrimp, sausage, corn, and potatoes. Stir to coat.
  4. Divide mixture between four 12x12 inch sheets of aluminum foil. Fold edges of foil up around the mixture to create a closed packet.
  5. Set packets on the grill for 10 minutes on one side, then flip and cook another 5 minutes on the second side.
  6. Serve shrimp boil foil packs with fresh parsley, lemon and lime wedges.
