Ingredients


1 tablespoon fresh Cilantro, Chopped

1 Garlic Clove, Minced

2 tablespoons Key Lime Jerk Seasoning

Zest of 1 Lime

3 tablespoons lime juice

1 tablespoon fresh Mint, Chopped

1/3 cup + 2 tablespoons Olive Oil

1 pound peeled and deveined, thawed Shrimp, Jumbo

12 bamboo skewers, soaked in water overnight Skewers

½ small seedless Watermelon

These refreshing Grilled Shrimp Skewers with Watermelon are the perfect way to celebrate a beautiful afternoon grilling in the backyard! Sweet and smoky, these seafood skewers are an excellent way to cook a healthy recipe on the pellet grill! Delight your family and make a tasty and refreshing summer meal!

  1. Fire up your Louisiana Grill and set the temperature to 400°F. If using a gas or charcoal grill, set it up for high heat.
  2. In a large bowl, combine the olive oil, lime zest, lime juice, chopped cilantro, chopped mint, minced garlic, and Key Lime Jerk seasoning. Whisk the marinade together until everything is well combined.
  3. Add the shrimp to the marinade, cover, and chill for 1 hour in the refrigerator.
  4. Cut the watermelon small squares and thread onto half of the skewers, and brush with olive oil. Place the watermelon on the grill and grill on one side for 1 minute, or until grill marks appear.
  5. Thread the shrimp onto the remaining skewers and grill for 1 minute, then turn and grill 1 more minute, or until shrimp is pink and has grill marks. Remove from the grill and serve immediately.
