Cooking Instructions

For a fresh spin on your traditional holiday bird, try this flavorful Greek Roasted Turkey. Antibiotic-free Honeysuckle White® Turkey is coated in a lemon, garlic, and herb-infused butter and stuffed with lemon quarters, garlic halves and fresh herbs. The turkey is roasted on the pellet grill to infuse luscious wood-fired flavors, while the butter adds color, flavor and moisture.

Wood Pellet Recommendation

In order to add a level of smokiness without overpowering the delicious, unique flavors in this recipe, we recommend using our Competition Blend Hardwood Pellets.

  1. Fire up your Louisiana Grills pellet grill on SMOKE mode and let it run with lid open for 10 minutes then preheat to 325° F. If using a gas or charcoal grill, set it up for medium-low heat.
  2. Spray the rack of a roasting pan with non-stick spray. Set aside.
  3. Remove the giblets and the neck from inside the turkey, then blot the turkey dry with paper towel. Transfer the turkey to the roasting rack, breast side up.
  4. In a mixing bowl, add the room-temperature butter, garlic powder, dried oregano, dried parsley, dried thyme, salt, pepper, and lemon zest.
  5. Carefully lift the skin up and insert the butter mixture on the breast, thighs, and legs.
  6. Place the lemon quarters, garlic halves, bay leaves, and parsley sprigs inside the cavity, then drizzle melted butter over the outside of the turkey. Pour water into the bottom of the roasting pan.
  7. Transfer the turkey to the grill and roast for 3 ½ hours, or until an internal temperature of 165° F is reached. Be sure and rotate and baste the turkey every hour for even color.
  8. Remove the turkey from the grill and let it rest for 20 minutes before carving.
