Roasted Pork Sandwich on Pretzel Bun

Ingredients

¼ cup Banana Peppers
⅔ cup Chicken Stock
½ cup Kosher Salt
1 2 lb. Lemon, halved and juiced
1 tsp Mixed Peppercorns
1 tbsp Olive Oil
4 cups Pork Loin, boneless
4 Pretzel Buns
1 Red Onion, thick sliced
2 tbsp Stone Ground Mustard
¼ cup Sugar, Granulated
Water

Cooking Instructions

This mouthwatering roasted pork sandwich is stacked high on a pretzel bun sandwich for a delicious and healthy meal. Pork loin is flavorful, lean, and perfect for slicing up tender pieces of meat for sandwiches. For extra flavor and tenderness, we brined our pork loin, roasted it on the pellet grill then stacked it with caramelized onions and zesty banana peppers on a hearty pretzel roll slathered with tangy stone-ground mustard.


Pork Loin Brine Recipe

In a large glass mixing bowl or measuring cup, whisk together water, salt, sugar, lemon juice, and mixed peppercorns. Add pork loin to brine, cover with plastic wrap and refrigerate for 6 hours.

Note: It is recommended to use New England Apple Hardwood Pellets with this recipe.

  1. Fire up your Louisiana Grills pellet grill and preheat to 425° F. If using a gas or charcoal grill, set it up for medium-high heat. Place cast iron skillet on the grill to preheat.
  2. Add oil to cast iron skillet and swirl around to coat the bottom. Once oil is glistening, place pork loin on skillet and sear on all sides, about 7 to 9 minutes. Discard remaining brine.
  3. Place onion slices to pan surrounding the pork loin, and turn to coat in oil. Close grill cover and cook for 15 minutes.
  4. After 15 minutes, flip the pork loin and rotate onions. Add the chicken stock, and continue to grill for an additional 15 minutes or until internal temperature reaches 140°F.
  5. Remove pork from grill and rest on cutting board for 15 minutes. Slice into ¼” pieces. When ready to assemble sandwich, spread ½ tablespoon of mustard on the bottom half of the pretzel bun, top with 2 slices of pork, grilled onion, banana peppers, and top half of bun. Serve hot.

Tip

Go with a center cut pork loin as it is the most tender and flavorful cut of pork loin.
