Grilled Thai Chicken Thighs

Ingredients

2 tsp Basil, Chopped
8 bone-in Chicken Thighs
2 tsp Cilantro, Chopped
½ tbsp Fish Sauce
2 Garlic Cloves, Minced
1 tbsp Ginger Root, grated
1 tbsp Light Brown Sugar
1 Lime, Juiced
3 Mint Leaves, chopped
2 tsp Red Chili, chopped
1 Scallion, sliced thin
2 tsp Sesame Oil
½ tsp, toasted Sesame Seeds
2 tbsp Soy Sauce
1 tsp sriracha sauce
⅓ cup Thai Chili Sauce

Cooking Instructions

These Grilled Thai Chicken Thighs are filled with bold flavors, with no marinating required. The Thai-inspired sauce features sesame oil, soy sauce, ginger, and brown sugar, with a kick from Thai chili sauce and a hint of Sriracha. Thighs and sauce are cooked together on the grill until the sauce thickens and caramelizes over the tender chicken, with hints of wood-fired flavor. Garnish with fresh basil, mint, cilantro and chilis for added freshness and heat.

The sweet and light flavors of Apple Hardwood are a nice compliment to the Asian inspired flavors in this Thai Chicken Thighs recipe.

  1. Fire up your Louisiana Grills pellet grill and preheat to 400°F. If using a gas or charcoal grill, set it up for medium-high heat.
  2. Cover a sheet tray with aluminum foil and spray with non-stick spray.
  3. Place chicken thighs skin-side-up on tray and brush with sesame oil.
  4. In a glass measuring cup or bowl, whisk together chili sauce, fish sauce, sriracha, garlic, ginger, light brown sugar, and lime juice. Pour over chicken thighs, and turn to coat. Place chicken thighs skin-side-down on the foil-lined sheet tray, then transfer to grill.
  5. Cook chicken for 15 minutes, then flip, baste with sauce, and cook an additional 20 minutes. Baste with more sauce, then remove from grill.
  6. Transfer chicken to a platter and garnish with fresh herbs, chili pepper, scallions, and sesame seeds. Drizzle with thickened sauce from sheet tray and serve hot.

Tip

The infuse the Thai flavors into the meat, try injecting some of the sauce into the chicken thighs about an hour before cooking on the grill.
