½ cup prepared Barbecue Sauce
8 Bread, Slices
2 cups Cheddar Cheese, Shredded
2 boneless, skinless Chicken Breast
Butter flavored Cooking Spray
2 tablespoons Louisiana Grill Sweet Rib Rub

Learn to make this tasty Grilled Cheese with BBQ Chicken Sandwich on the pellet grill! An easy, cheesy, delicious twist on a classic, this sandwich will be a favorite at lunch time, game day, or any occasion! It comes together in a snap and will please every palate. Be sure to make extra — these won’t last long!

  1. Fire up your Louisiana Grill and set the temperature to 350°F. If you’re using a gas or charcoal grill, set the temperature to medium.
  2. Generously season the chicken breasts on all sides with the Sweet Rib Rub. Place a temperature probe into one of the chicken breasts and grill for 7-10 minutes on each side, or until the chicken is golden brown, has grill marks, and has reached an internal temperature of 165°F.
  3. Build the grilled cheese sandwiches. Place a large handful of shredded cheddar cheese on one slice of bread, then add a scoop of the barbecue chicken and top with a second slice of bread.
  4. Remove the chicken from the grill and allow to rest for 5 minutes. Once the chicken has finished resting, chop the chicken into ¼ inch bite sized pieces and place in a large mixing bowl. Add the barbecue sauce and mix well to coat.
  5. Lightly spray the sandwiches with butter flavored cooking spray and grill the sandwiches for 2-3 minutes, or until the sandwiches are crispy and the cheese is melted. Remove from the grill and serve immediately.
