Cooking Instructions

It’s easy to love tacos. How can you not? The taco whether soft or crunchy, is the perfect delivery vehicle to hold meat, veggies and cheese while you place those flavor packages into your mouth. A soft taco is a warm blanket of deliciousness while the crunchy taco gives your meal an extra element of texture that compliments the tenderness of the meat and the creaminess of cheese. However, sometimes the typical taco can become tiresome so it may be time to shake things up a bit. If this is the case, ladies and gentlemen, we give you: Korean BBQ Tacos.

Korean BBQ is known for fresh ingredients, tender meats, and spicy, sweet flavors. These little tacos hit all those notes and then some. With a short prep and cook time, this dish is a perfect dinner for any weeknight, such as Taco Tuesday.

Note: It is recommended to use Texas Mesquite Hardwood Pellets with this recipe.

  1. Cut skirt steak into thin strips against the grain. Cutting the meat while partially frozen will assist in getting thin slices. Place the steak into a bowl and coat evenly with vegetable oil. Liberally apply your favorite Korean BBQ Seasoning and toss until evenly coated. Let the meat marinate for at least an hour.
  2. Fire up your Louisiana Grill and set for smoke mode. After the pellets are fed into the burn pot and start to ignite, set your temp for 400°F. Set the skillet on the grill so it will be hot when it’s time to add your steak. No oil is needed in the pan, the steak is coated in oil.
  3. Pickled Radish and Carrots:
  4. Give the steak a quick sear in the skillet for approximately 2 minutes on each side and remove from the heat.
  5. Prepare tacos using your favorite taco shells, add the desired amount of steak, top each taco with pickled radish and carrot mixture, diced jalapenos, diced red onion and, cilantro…Enjoy!!!
