Cooking Instructions

Tacos get an extra healthy twist with homemade low-carb smoked tortillas filled with carne asada. Keto-friendly (underline link) and gluten-free, the tortillas are made from scratch with almond flour and flax, then smoked on the grill to pick up subtle notes of wood-fired flavor. Filled with thinly sliced marinated skirt steak, these fresh and flavorful tacos can be topped with fresh salsa, avocados or any of your favorite toppings.

Skirt Steak Marinade

Place the skirt steak in a glass 9x9” dish, then juice one lime directly over steak and season both sides with Louisiana Grills Smoky Spicy Sweet Hot seasoning. Turn steak to coat, then cover with aluminum foil and refrigerate for 4 hours.

How to Make Low Carb Tortillas

  1. Whisk almond flour, flax meal, 1 ½ tsp of the Louisiana Grills Smoky Spicy Sweet Hot seasoning, and xantham gum together in a mixing bowl. Add egg, then slowly add in water. Mix by hand and roll into a ball. Cover and refrigerate for 30 minutes.
  2. Fire up your Louisiana Grills pellet grill and preheat to “Smoke” setting. If using a gas or charcoal grill, set it up for low indirect heat.
  3. Divide dough into 6 portions, and flatten each portion using a tortilla press. Fold a small sheet of parchment paper in half, then place on press, set dough ball on top, fold over the other side of the parchment, then press down.
  4. One a stove top, in a cast iron skillet, sear raw tortillas one minute per side. Place seared tortillas on square mesh grate and transfer to grill. Smoke tortillas for about 8 minutes, flipping half way through. Set aside in a towel-lined plate or basket to keep warm.

Note: This recipes uses Louisiana Grills Smoky Spicy Sweet Hot seasoning.

  1. Open the Flame Broiler Plate and increase the grill temperature to 400°F.
  2. Grill the steak 5 minutes per side, then remove from grill and transfer to a cutting board, allowing steak to rest for 10 minutes.
  3. Thinly slice steak against the grain and serve hot in smoked tortillas with salsa verde, fresh cilantro, and queso fresco - or your favorite toppings.
