1 Tablespoon All Spice, Ground

2 lbs Chicken, Boneless/Skinless

1 Tablespoon Cinnamon, Ground

1/4 Cup Extra-Virgin Olive Oil

3 Garlic, Cloves

2 inch piece Ginger, Fresh

3 Green Onion

1 Lime, Juiced

1 Tablespoon Nutmeg, Ground

1 Cup Orange Juice, Fresh


1 Red Onion, Chopped



1/4 Cup Soy Sauce

1/4 Cup Thyme, Fresh Sprigs

Cooking Instructions

  1. Soak the bamboo skewers in water for about 30 minutes (the longer the better).

  2. In a food processor, combine orange juice, oil, soy sauce, thyme, allspice, nutmeg, cinnamon, garlic, onions, ginger, lime juice, salt and pepper. Puree until smooth.

  3. In a large resealable bag, pour all but 1/4 cup of the mixture in along with the sliced up chicken breasts. Seal the bag and marinate in the fridge for 2 - 3 hours.

  4. Preheat your Grill to 450 degrees F.

  5. Skewer the chicken and grill for about 7 minutes. Flip and continue grilling for about 5 minutes, or until the chicken is cooked through and grill marks appear. Serve with the remaining 1/4 cup of marinade.
