Lobster Newburg

Ingredients

1/3 Cup Butter, Salted
¼ Cup Dry Sherry
4 Beaten Egg, Yolk
2 Tbsp Flour, All-Purpose
2 Cups half and half
½ Lemon, Juice
4 (about 1 ½ lbs. lobster meat) Lobster, Tail
1 Tbsp Parsley, Fresh
4 and Cut Diagonally into Halves slices of bread, toasted, buttered

Cooking Instructions

A rich and luxurious seafood dish, Lobster Newberg features tender lobster pieces tossed in a sherry cream sauce.

This New England classic gets a modern upgrade with smokiness from the pellet grill, yet served traditionally over buttered toast to soak up all of the decadent sauce. This dish is equally delicious spooned into puff pastry shells for an elegant appetizer.

Note: It is recommended to use New England Apple Hardwood Pellets with this recipe.

  1. Using kitchen shears, cut the shell of the tail and crack in half so that the meat is exposed. Carefully pull the meat away from the shell, still leaving it connected at the very base. Pull the meat away from the tail and gently set it on top of the shell.
  2. Fire up your Louisiana Grill and set the temperature to 400°F. Place the tails meat side up on the grill and cook until the shell has turned a vibrant red and the meat is white, about 10-20 minutes.
  3. Remove from the grill and transfer to a cutting board, let rest until cool enough to handle. Scoop meat from the shells (discard once empty) and place on cutting board. Chop any larger chunks into 1” pieces and set aside.
  4. In a large skillet over medium heat, melt butter then whisk in flour. Stir constantly for 2 minutes, then gradually stir in the half and half. Stir until sauce begins to thicken. Add sherry and lemon juice.
  5. Add egg yolk mixture into the skillet with remaining cream sauce and continue to stir constantly for 1 minute.
  6. Add lobster meat followed by fresh parsley. Continue to cook the mixture for an additional 5 minutes, but do not let it come to a boil. Ladle lobster and cream sauce over toast points and garnish with fresh parsley.

Tip

While the soft-shell lobster may be less expensive, a hard-shell lobster has yet to molt, so it is packed with more meat.
