These easy BBQ Chicken Stuffed Sweet Potatoes are a healthy and filling meal great for any time of year. The chicken is cooked alongside the sweet potatoes on the pellet grill, then diced and tossed in sweet and tangy BBQ sauce. For added freshness and texture, they’re topped with red onion, fresh jalapenos, cilantro, and queso fresco. Gluten-free and paleo-friendly, these sweet potatoes can be customized and stuffed with any toppings you have on hand. Quick, easy, delicious and guilt free.

Best Wood Pellets for White Meat Chicken

Since white meat has such a subtle natural flavor, most food grade hardwood pellets can be used for smoking. For this recipe, we recommend using Mesquite or Hickory hardwoods. Mesquite will add notes of spice while Hickory adds savory, smoky flavors.

Note: This recipe uses Louisiana Grills Sweet Heat Rub seasoning.

  1. Fire up your Louisiana Grills pellet grill and preheat to 400°F. If using a gas or charcoal grill, set it up for medium-high heat.
  2. Wash and scrub potatoes, then pat dry with paper towels. Coat the outside of potatoes with softened butter, spreading evenly.
  3. Place the sweet potatoes directly on the grill grate and cook until soft, about 1 to 1 ½ hours depending on the size of the sweet potatoes.
  4. Meanwhile, coat the chicken breasts in olive oil and season with Louisiana Grills Sweet Heat Rub. Transfer chicken to grill and cook 5 to 7 minutes per side. Remove from grill, cool slightly, then dice and add to a mixing bowl. Toss diced chicken in BBQ sauce and set aside.
  5. Once sweet potatoes are soft, remove from the grill and slice through the center of each potato. Gently press on the sides to create an opening. Top each sweet potato with BBQ chicken, cheese, red onion, jalapeño, and cilantro. Serve hot.
