1 cup Broccoli Florets, blanched

Flavorful and healthy, this BBQ Chicken Frittata is an easy dish that can be made right on the grill for breakfast, lunch or dinner. Filled with delicious BBQ pulled chicken, mushrooms, broccoli and cheese, this recipe starts by smoking the chicken, then shredding and tossing it right into the skillet with sautéed vegetables, eggs, cream and cheese. The eggs bake right on the grill until fluffy, golden and delicious. Better yet, this recipe can be customized and made with whatever veggies you have on hand.

Wood Pellet Recommendation

In order to bring out the most flavor from the chicken in this recipe, we recommend using our Wisconsin Hickory Hardwood Pellets.

Note: This recipe uses Louisiana Grills Champion Chicken Rub Seasoning.

  1. Fire up your Louisiana Grills pellet grill and with the lid open, set your temperature to SMOKE mode.
  2. Once the fire is lit, preheat to 275° F. If using a gas or charcoal grill, set it up for low heat.
  3. Season chicken breasts with Champion Chicken, then transfer to the grill and BBQ for 60 to 90 minutes. Remove from the grill, rest for 10 minutes, then shred.
  4. Place a cast iron skillet on the grill, then increase the temperature of the grill to 350° F.
  5. Heat butter and olive oil in the skillet, then sauté mushrooms and onion for 3 minutes, until onions are translucent. Stir in broccoli and shredded chicken and heat for 2 minutes.
  6. Meanwhile, whisk the eggs and heavy cream in a glass measuring cup or mixing bowl. Stir in shredded cheese, then pour over chicken and vegetable mixture. Season with additional Champion Chicken, then cover the grill and bake for 35 to 40 minutes.
  7. Remove frittata from the grill, rest for 5 minutes, then slice and serve warm.
