Monster Cookies


2 Packages Candy Eyeballs
Green, Blue and Purple Food Coloring
1 Box of Yellow Gluten Free Cake Mix
1/2 Cup (optional) Granulated Sugar
2 Large Eggs
1/3 Cup Powdered Sugar
1 Teaspoon Pure Vanilla Extract
6 Tablespoon Melted Vegan Butter (unsalted)

Cooking Instructions

    Gluten Free

  1. Preheat your grill to 350°F. Close the flame broiler.

  2. Line two large baking sheets with parchment paper. In a large bowl, combine cake mix, melted butter, eggs (or egg substitute), powdered sugar, sugar (optional), and vanilla and stir until combined. (substitute 2 flax eggs for Vegan – 1 tbsp flaxseed meal and 2.5 tbsp water per egg).

  3. Divide dough between 3 bowls and dye each bowl a different color.(We used green, blue and purple).

  4. Roll dough into tablespoon-sized balls.

  5. Place about 2'' apart on the baking sheet and grill until tops have cracked and the tops look set, 8 to 10 minutes. – Turn half way through baking, after 4-5 minutes.

  6. Immediately, while the cookies are still warm, stick candy eyeballs all over the cookies.

  7. Let cool completely before serving.
