1 lb Bacon

1 1/2 tsp Baking Powder

1 1/2 tsp Baking Soda

1 Cup Cocoa, Powder

2 Egg

1 3/4 cups Flour

1 Cup Milk, Whole

1/2 Cup Oil

1 tsp Salt

2 Cups Sugar

2 tsp Vanilla

1 Cup Water, Boiling

Cooking Instructions

  1. Start your Pit Boss on SMOKE with the lid open until a fire is established in the burn pot (3-7 minutes). Preheat to 250°F.
  2. Once your grill is preheated, place bacon strips on the grates. Smoke for 1hr-1 ½ hours or until desired crispiness is achieved.
  3. Remove the bacon from the grill and set aside.
  4. Increase set the temperature to 350°F and preheat.
  5. Mix the rest of the ingredients in a bowl with an electric mixer until it is nice and smooth.
  6. Pour the mixture into a cupcake tin.
  7. Transfer the tin to your grill and bake for about 20 - 25 minutes.
  8. Allow the cupcakes to cool on a wire rack. Once cooled, top with your favorite premade icing and a half of strip of the bacon. Serve and enjoy!

To make homemade icing, add butter to a large bowl and mix with milk, vanilla and salt. Next add cocoa powder by sifting it and whip with a whisk or electric mixer together until smooth. Next stir in powdered sugar by sifting it into the mixture. Scrape sides and whip again until light, fluffy and smooth, 1-2 minutes.
