Ingredients


1 tbsp Basil, Chopped

1 Garlic Clove, Minced

5 oz Goat Cheese

12 Grape Leaves, brined

1/2 cup Greek Yogurt (for Sauce)

8 oz Ground Pork/Sausage

1 1/2 tsp Lemon Pepper Garlic Herb Seasoning

1 tsp Lemon Pepper, Garlic and Herb Seasoning (for Sauce)

1/2 Lemon, juice & zest

Lemon, juice & zest (for Sauce)

1 tbsp Olive Oil

3/4 tsp Oregano, dried

1 tbsp Parsley, chopped

1/2 Yellow Onion, minced



Cooking Instructions


Stuffed grape leaves, or Dolmades, are one of the most iconic Mediterranean dishes. Briny grape leaves are stuffed with a mixture of ground pork sausage, garlic, goat cheese and fresh herbs. The leaves are rolled and grilled until lightly charred on the outside, and creamy and gooey on the inside. Serve alongside a zesty lemon-yogurt dip for a delicious and unique appetizer.

In order to magnify the sweet, zesty notes in this recipe, we recommend using our New England Apple Hardwood Pellets.

Note: This recipe uses Louisiana Grills Lemon Pepper, Garlic and Herb Seasoning.

Note: The FDA recommends to cook ground meat to a minimum internal temperature of 160°F.

  1. Fire up your Louisiana Grills pellet grill on SMOKE mode and let it run with lid open for 10 minutes then preheat to 400° F. If using a gas or charcoal grill, set it up for medium-high heat. Preheat cast iron skillet by placing directly on grill grates.
  2. Sauté ground sausage in the skillet for 3 minutes, breaking up with a wooden spoon. Add onion, garlic, and dried oregano and continue to sauté for 2 minutes longer. Remove skillet from the grill, and transfer meat to a mixing bowl.
  3. Combine meat with goat cheese, Lemon Pepper Garlic & Herb, parsley, basil, lemon juice and zest. Set aside.
  4. Prepare sauce: In a small bowl, mix together yogurt, Lemon Pepper Garlic & Herb, and lemon juice and zest. Set aside.
  5. Rinse grape leaves and gently blot dry with paper towel. Place 1 tablespoon of filling in the middle of each grape leaf. Fold the left and right sides of the leaf over the filling, then roll the grape leaf. Set aside on a plate, and brush with olive oil.
  6. Place stuffed grape leaves on the grill, seam side down, and grill 1 to 2 minutes per side.
  7. Transfer grilled grape leaves to a platter and serve warm with yogurt sauce.
