Ingredients

2 Cups Blueberries, Fresh
1 Cup Pancake Mix
1/2 Cup Sugar
3/4 Cup Water, Warm

Cooking Method

Preheat your Grill to 350 degrees F. Lay a BBQ Mat on the grates of your grill. 

In a large bowl, pour water, pancake mix and 1/2 cup of the blueberries and mix until combined. 

Pour the batter onto the grill mat in 4 equal parts. Cook with the lid closed for about 6 minutes, or until the edges of the pancakes are slightly cooked. Flip each pancake, and continue cooking for another 4 minutes. 

To make blueberry sauce, heat your cast iron pan in the for about 10 minutes. Pour the rest of the blueberries in the cast iron pan and heat for a couple of minutes. Start stirring/crushing the blueberries and add sugar. Mix until the sugar has dissolved and the blueberries are mashed to your liking. 

Pour the hot blueberry sauce over your freshly cooked pancakes and enjoy!
